The juices run clear - so the chicken must be safe. Must it?

Pierce the thickest part of the bird, watch the juices, and if they run clear rather than pink, the chicken is done. This test is embedded in British kitchen life as thoroughly as any piece of cooking advice has ever been. It appears in hundreds of cookbooks, across food websites, on food television, and in BBC Food guidance. It is the check millions of home cooks perform every Sunday, and every time they put a bird on the barbecue. The logic behind it feels sound: raw meat is red, cooked meat is not, and the colour of the juices should tell the story. The intuition is not entirely baseless. But treating juice colour as the primary - or the only - test of whether chicken is safe to eat is a mistake that documented laboratory testing has now settled.

Campylobacter, the bacterium most commonly associated with raw and undercooked poultry, is the UK's leading cause of bacterial food poisoning. Chicken is the most widely consumed meat in the country. The reliability of the test people use to decide when to serve it is not a minor culinary footnote.

The verdict

The mechanism behind the test is real, and that is precisely why the myth has lasted so long. Myoglobin - the iron-bearing protein that gives raw meat its pink and red colour - does denature with heat, and juice colour does shift, broadly and generally, from pink towards clear as cooking progresses. The test also fails in the opposite direction. The pH of the meat, the age and breed of the bird, its freezing and thawing history, and the cooking environment can all affect myoglobin behaviour independently of temperature. Discarding a safely cooked bird because the juices look slightly pink is the mirror-image error.

It is worth noting why the myth has proved so durable. Platforms that readers might reasonably trust have continued to repeat it. BBC Food states: "If the juices run clear, the turkey is cooked through. If they are still pink, return the bird to the oven for a further 20-30 minutes, then try again." EatingWell advises: "For properly cooked chicken, if you cut into it and the juices run clear, then the chicken is fully cooked." These are not fringe sources. The test has been repeated in good faith for generations, and the food-science testing that undermines it is not yet widely known outside specialist circles. Believing it was a reasonable position for a long time. It is no longer a safe one to act on alone.

What to do instead

Use a probe thermometer as the primary and definitive doneness check for all chicken preparations - whole birds, bone-in joints, thighs, drumsticks, and breast fillets. The thermometer is not an optional extra; it is the only instrument that can read what the eye cannot.

For a whole bird, insert the probe into the thickest part of the thigh, well away from the bone. The thigh is the last part of the bird to reach a safe temperature. If the thigh is done, the rest of the bird will be done. The breast cooks faster and is not the correct primary probe point for a whole bird. Bone conducts heat faster than muscle and will give a falsely elevated reading, so angle the probe to reach the centre of the muscle mass.
