Georgian Spiced Meat Pizza
A double-meat pizza inspired by Georgian cuisine - spicy sausages and grilled kebab meat on a classic tomato and mozzarella base. Georgia sits at the crossroads of Eastern Europe and Western Asia, and this pizza reflects that with bold, warmly spiced flavours that are a step beyond the ordinary.
The combination of two different meats gives this pizza a genuine depth. The sausage provides a consistent spicy heat across every bite, while the kebab meat adds charred, smoky chunks that make each slice interesting.
Ingredients
- 1 pizza dough ball
- 50g tomato pizza sauce
- 100g fresh mozzarella, torn
- 100g spicy sausages, sliced
- 4 small kebab skewers, meat removed
- Olive oil
- Salt and pepper
Method
- Fire your pizza oven to 400 to 450 degrees.
- Stretch the dough to about 12 inches on a floured surface.
- Spread the tomato sauce evenly over the base, leaving a border for the crust. Scatter the mozzarella and drizzle with olive oil.
- Distribute the sliced spicy sausage and kebab meat across the surface.
- Season with salt and pepper, drizzle with olive oil.
- Slide into the oven and bake for 60 to 90 seconds, turning frequently for an even cook.
- Serve immediately.
Cedar Tip
Seek out Georgian-style sausages from a deli if you can - they tend to be warmly spiced with coriander, fenugreek and chilli rather than the Italian fennel-and-garlic profile. If you cannot find them, any good quality spicy sausage will work well.
