Serbian Grilled Pepper Pizza
Serbia keeps things beautifully simple with this one - grilled red peppers on a classic Margherita base. The smoky sweetness of charred peppers against tangy tomato sauce and melted mozzarella is a combination that has been loved across the Balkans for centuries. Sometimes the simplest pizzas are the best.
Originally created as the Serbia entry for DeliVita's Euro 2024 pizza series, this works best with properly charred peppers - either grilled on your pizza oven dome while it heats up, or from a good jar of fire-roasted peppers. The smokiness is the whole point.
Ingredients
- 1 pizza dough ball
- Flour for dusting
- 50g tomato pizza sauce
- 100g fresh mozzarella, torn
- 100g grilled red peppers, sliced
- Olive oil
- Salt and pepper
Method
- Fire your pizza oven to 400-450 degrees.
- Stretch the dough to about 12 inches on a well-floured surface.
- Spread the tomato sauce over the base, leaving a border for the crust. Scatter the mozzarella and drizzle with olive oil.
- Arrange the grilled pepper slices across the surface. Season with salt and pepper and drizzle with a little more olive oil.
- Slide into the oven and cook for 60-90 seconds, turning frequently. The peppers should warm through and the edges may char further, adding even more smokiness.
Cedar Tip
If you have time, grill the peppers on the dome of your pizza oven while it heats up. Place whole peppers on the dome, turn occasionally, then peel and slice when charred. Nothing beats freshly fire-roasted peppers - but a good jar works well too.
