Wood-Fired Loaded Hot Dogs

A great hot dog cooked in a pizza oven is one of life's simple pleasures. The cast-iron skillet gives the sausage a proper sear that you cannot get from boiling, and the whole thing takes five minutes from pan to plate. This is the recipe to have in your back pocket when you have got the oven fired up and need to feed people fast - especially kids, who will eat approximately four each.

Ingredients

  • Good-quality frankfurters or smoked Polish sausages (1 per person)
  • Hot dog rolls (1 per person)
  • A drizzle of cooking oil

Classic Toppings

  • Finely shredded iceberg lettuce
  • American mustard
  • Tomato ketchup

Loaded Toppings

  • Sliced pickles
  • American mustard
  • Slow-roasted onion slices
  • Sauerkraut
  • Crispy fried onions

Method

  1. Preheat a cast-iron skillet in your pizza oven until it is properly hot.
  2. Add a drizzle of oil and place the sausages in the pan. Cook for a few minutes, then flip and cook until the outside has a good sear all over and the internal temperature reaches 70°C.
  3. While the sausages cook, warm the rolls briefly at the oven mouth - you want them warm and slightly toasted but not crispy.
  4. Lay the seared sausage into the roll and load up with your choice of toppings.

This is a great one to cook for a crowd - get a production line going with a toppings station and let everyone build their own.

Cedar Tip

Invest in good sausages - a proper frankfurter or smoked Polish kielbasa from a butcher makes an enormous difference compared to supermarket hot dogs. The cast-iron sear is what elevates this from a basic hot dog to something genuinely worth eating.
