Romanian Pulled Pork and Chilli Jam Pizza

Romania brings the heat with this one - tender pulled pork piled onto a tomato and mozzarella base, then drizzled with sweet chilli jam. The combination of slow-cooked pork and sticky, spicy jam is addictive, and the wood-fired oven caramelises the edges of the pork beautifully.

Originally created as the Romania entry for DeliVita's Euro 2024 pizza series, this is a brilliant way to use up leftover pulled pork. The chilli jam cuts through the richness of the pork and adds a glaze that catches and caramelises in the extreme heat of the oven.

Ingredients

  • 1 pizza dough ball
  • Flour for dusting
  • 50g tomato pizza sauce
  • 100g fresh mozzarella, torn
  • 200g cooked pulled pork
  • Chilli jam, for drizzling
  • Olive oil
  • Salt and pepper

Method

  1. Fire your pizza oven to 400-450 degrees.
  2. Stretch the dough to about 12 inches on a well-floured surface.
  3. Spread the tomato sauce over the base, leaving a border for the crust. Scatter the mozzarella and drizzle with olive oil.
  4. Pile the pulled pork across the surface, then drizzle generously with chilli jam. Season with salt and pepper.
  5. Slide into the oven and cook for 60-90 seconds, turning frequently. The chilli jam will caramelise and the pork edges should char and crisp.

Cedar Tip

Do not be shy with the pulled pork - 200g sounds a lot but it shrinks and compresses. The chilli jam is the star here, so drizzle it in zigzag lines across the surface so every slice gets some. Leftover slow-cooked pork is ideal.
